I'd like to emphasize the legal aspect as well. I'm certainly no expert, but one facet of email that must be considered is retention schedules. Craft a retention program with the assistance of legal counsel that has expertise in the field, paying particular attention to developing criteria for what needs to be saved (and correspondingly, what doesn't!) Then make sure it is consistently applied.
